Learning about Veganism is SLOW but rewarding...
but I AM learning. The Man is more motivated than I as he has that kind of personality, i.e. challenges exist to be met and overcome. I, on the other hand, love fat and salt in my food. Meat and other sorts of animal products are not that important to me. However, the only thing I can think of that I think is salty enough as it comes from the store would be bacon. To go salt-free? I can't imagine it. However, the Man is soldiering through such trifles and is losing weight and feeling better and better. Hoorah for him. I need to take heed of his excellent example.
I am finding vegan recipes to be delicious as long as there is sufficient fat and salt in them. So I just add some to my meals at the table. I certainly add only half of what I have added in the past but I can't seem to force myself to go cold-turkey -- oops! I guess now that would have to be "cold-tofu"!
Fat substitutes that work best for me so far are flaxseed meal, which I have used in some dishes as well as especially in bread and other baking, and applesauce, which I've only used in breads. Applesauce is a straight up measure for measure of oil or fat. Flaxseed meal is a 3 units flaxseed meal for 1 unit of oil. An egg substitute that seems to work perfectly is 1 tablespoon psyllium husks and 2 tablespoons water for each egg replaced. You can also use flaxseed meal to replace eggs but only if you are not using flaxseed meal as oil replacement as well in the same item.
